Cane-Sugar-Free Taro Root Smoothie With Boba


When we go out to eat Korean food, we always order a taro smoothie or at least it's counterpart, the ube smoothie. There's something about the creamy texture and the sweet, subtle flavor that just coats your tongue with sugary richness. In our part of the country, taro smoothies aren't exactly commonplace and most people out here haven't even heard of ube, so as we so commonly do, we had to make it at home. The thing is, now that we've ironed out our recipe, we may not be going out for them any time soon.


Sugar-Free Taro Root Smoothie
(approx. 10 mins)
(makes about 20 oz)

1/4 cup of taro root powder
1/4 cup of agave syrup
1/2 cup of half & half
About 24 oz of ice

1/4 cup of prepared boba pearls (optional)

The hardest part about this one is finding a quality taro root powder. A quick run to your Asian market, however, and you should be able to find some, if not, you can find it online.
Simply combine all of the ingredients in your blender and pulse until the ice is mixed thoroughly. Set your blender on high and purée for 1-2 minutes for the perfect consistency.
Add your prepared boba and pour the smoothie overtop.
Now, just pop in a straw and enjoy with your favorite Korean side dish or just on it's own!
