Asiago Rosemary Butternut Squash Scones

What do you do when you have a big ol’ squash from the farmer’s market? Roast it or make a soup? Make a pie? Well we decided to grate it up and make scones.
We already had everything else we’d need so we got to brainstorming. How about a savory scone? We’ve got a block of Asiago cheese and some spices that would be good with it. Toss in that squash and I think these could be pretty phenomenal.

 Asiago Rosemary Butternut Squash Scones

(Makes 8 scones)
(Approx 45 mins)

2 cups (140g) flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup grated butternut squash
1/2 cup (1 stick) very cold unsalted butter
1/2 cup whipping cream
1 large egg
1 cup shredded Asiago cheese
1 tsp fennel seed
1/2 tsp black pepper
3 drops of rosemary extract



Preheat your oven to 400 degrees.
Mix the flour, baking powder, salt, fennel and pepper in a large bowl. It’s important to sift and weigh out your flour to ensure you don’t add too much. You can read more about that here.

To ensure the butter is nice and cold, we kept it in the freezer for an hour before using it. We went ahead and grated up the butter before adding, it just makes things easier.
Mix by hand, breaking up the butter until it looks like herby sand.

Whisk together the cream, egg and rosemary extract in a separate bowl and then add to the flour mixture. Mix until the liquid is just barely absorbed.
Gently fold in the grated squash and cheese, saving a few tablespoons of cheese to put on top.
Turn the mixed dough out onto a floured surface and roll into a ball.
Flatten that bad boy into an 8 inch disk and cut into 8 pieces with a very sharp knife. We’re trying to avoid pinching the edges so that the scones puff up during the baking process.
Slap the pieces onto a parchment-lined cookie sheet and bake for 10 minutes, take them out of the oven and top with the remaining asiago cheese. return to the oven and bake for an additional 5-7 minutes.
The bottoms should be golden and the cheese on top should be starting to get crispy and brown.

These are so much more flavorful than we could ever imagine. Perfect with coffee or just as a snack. These are far better than anything we can get locally and they cost us next to nothing!!
